A Thoughtful Approach

At De Mark, the seasons lead and vegetables often take center stage. We cook with what is fresh and nearby, from local farms, our gardens, and producers who share our respect for the land. Every ingredient is a conscious choice selected for its quality and origin. Wines and drinks follow the same thinking: from thoughtful European producers.

We use woodfire to grill, smoke, and slow-cook. We ferment and pickle to preserve. The result? Unpretentious dishes created from local ingredients that simply taste good.

We compost scraps, and cut waste. and don’t just reduce impact, we rethink it. We generate our own electricity, recyle water, are fully gasless and Green Globe Certified, to name a few.

De Mark is craft, curiosity, and care. No secret sauce, just honest food, relaxed hospitality, and respect.

 

Our Food and Drinks

At De Mark, vegetables often take center stage. Our menu follows the rhythm of the seasons, and when we cook with fish or meat, we choose the most sustainable options available. You’ll find familiar ingredients presented in unexpected ways like our Tomato Tartare, a loved signature since day one, or our “onkruidenboter,” a herb butter made with local weeds. We aim to use every part of what we source, transforming trimmings and scraps into amuse-bouches or preserves. Whenever possible, we work with producers close to home who share our respect for quality and the environment.

This belief also extends to our drinks selection. From carefully chosen Dutch whiskies to distinctive wines from across Europe, every bottle reflects the same attention to craft, origin, and sustainability as our kitchen.

Our Restaurant

Sustainability runs through every part of De Mark, not just the plate. Our furniture is restored or repurposed, with an eye for reuse over replacement. Tiles throughout the space come from local makers, and our plates are handcrafted by a nearby ceramic artist. Linens are made from a blend of organic cotton and linen, sourced through partners who produce with care. From materials to small details, we choose thoughtfully because the environment we eat in matters as much as the food itself.

The hotel at De Mark is built for comfort with a conscience. It’s fully electric, heated with a heat pump, powered by solar panels, and insulated with Fineo glass to preserve both warmth and character. We reuse greywater via a Hydraloop system, light with LEDs, and clean with sustainable products. Our guest rooms feature locally sourced materials, GOTS-certified organic linens, and digital in-room guides to limit paper use. Staff meals are prepared daily by the team for each other, and we support our colleagues with discounted housing, bike options, and sustainable mobility options. We’re Green Globe certified and proud to say our operations match our philosophy: thoughtful, local, and low-impact.
