Our Wine Philosophy
At De Mark, wine belongs at the heart of the dining experience.
Our cellar is shaped by a love for Europe’s great wine regions and for the people who bring them to life. More than 880 carefully chosen references tell a story of place, craft and character. From the renowned vineyards of Burgundy and Piedmont to small, terroir-driven producers in less familiar corners of the continent, each bottle has been selected for its honesty, individuality and sense of origin.
Germany has a special place in our collection, with an extensive selection from some of the country’s most respected estates, including Keller and Schäfer-Fröhlich. Alongside these, you will find a considered range of Barolo and a broad selection of wines that speak clearly of where they come from.
As our kitchen follows the rhythm of the seasons, our selection by the glass moves with it. We change it regularly to sit naturally alongside the menu, always guided by quality, balance and character.
Whether you are looking for a rare bottle, a trusted classic or something unexpected, our wine list is made to be explored. Ask, taste, and discover. We are here to guide you.
