Menus are developed with a strong focus on seasonality, where old favourites are handled with a respectful, light touch, familiar classics are bold and unfussy, and humble ingredients create dishes that simply taste good. Local, fresh and seasonal ingredients underpin the menu, with many ingredients sourced close to home. 


Food waste is limited by creatively using trimmings and scraps, and we also have our own compost machine to ensure nothing goes to waste. Whether you're pairing your meal with a bottle from the wine cellar, extending your lunch with some cocktails and after-lunch snacks, or starting your dinner with some 'borrel' bites from our bar menu, everything is thoughtfully crafted. Our sourcing is based on both quality and proximity, ensuring that every dish supports local producers while minimizing the impact on the environment.
